Standard-Bred Jersey Giant Chickens
The Craig Farm raises beautiful white Jersey Giants in north Georgia. Our goal is to breed Jersey Giants according to the APA Standard of Perfection. We hope to maintain a flock that is competitive in the show ring while also laying a generous number of eggs and providing a delicious, pasture-raised table fowl.
Brandon and I began building our Jersey Giant flock in 2022. Our flock originates from Hall/Vaughn lines. In 2024, we are breeding our second generation of home-bred white Giants! The Jersey Giant is an impressively large bird. They are known as gentle giants, having a very calm demeanor. Jersey Giants were developed in the United States as a dual purpose breed: laying a good number of eggs while growing large enough for home meat production. Jersey Giants are slow growing so they are typically better suited for slow cooking techniques such as in the crock pot, smoking, or roasting. That said, we have had an 8 month old Jersey Giant for dinner as fried chicken (a dish usually best reserved for young birds) which was delicious. Home grown, heritage breed chicken is extremely flavorful and even has a somewhat different, firmer texture compared to the meat from the grocery store.
Jersey Giants are on the Livestock Conservancy's watch list. Without continued dedication from breeders, over time, the breed could become endangered and eventually go extinct. We hope to help preserve the Jersey Giant.

Availability
I do not hatch chicks specifically to sell nor do I sell hatching eggs at this time. Due to limited space, I hatch only the number of Jersey Giant chicks that I plan to raise for my needs. I monitor the development of these young to choose the ones that I will continue growing out. As I begin making these selections, I offer for sale extra juveniles or retired breeding stock. Any availability is usually late summer or autumn.
That said, in 2023 we had a rash of fox attacks resulting in a loss of over half our small flock. We have since built an electrified fortress for our birds but I don't anticipate being able to offer much if anything for sale in 2024 while I rebuild my breeding program.
